When you have a freezer full of smoked venison sausage and can’t think of how to use it besides with eggs you have to get creative.  I’m sure this recipe would be good with any smoked sausage or maybe even italian but I haven’t tried that yet.1 tube Grands Pillsbury Biscuits
1 tablespoon olive oil
2 sticks of sausage (I used 1 8 inch stick smoked sausage and 1 8″ stick smoked jalepeno sausage)
1/2 bag frozen broccoli
4 or 5 green onions
a couple roasted red peppers
1 cup fresh mushrooms
1 cup shredded cheddar cheese
1 egg, beaten

Preheat oven to 400°F. Saute broccoli, onions, red pepper and mushrooms until hot. While they are sauteing, remove biscuits and flatten 4 of them till they make about a 5 inch circle. Place veggies 1/4 of veggies in center of each flattened biscuit leaving 1/4 around edge. Top with sausage and cheese. Flatten the remaining 4 biscuits and place one on each and stretch over till it meets bottom biscuits. Pinch edges to seal. Wash top of mounds with egg.  Bake for 25 to 35 minutes.
