This is a great alternative to fried egg rolls. You can put almost anything in them. Make a good side dish or cut in half for appetizers. I enjoy them almost as much as when I’d fry them.

2 fully cooked chicken breasts (either from bag or left over)
2-3 cups coleslaw mix
1 tsp soy sauce (careful little goes a long way with saltiness)
½ tsp garlic from jar (or fresh but I cheat)
2 tablespoons green onion (I use dehydrated in jar. Very handy)
Egg roll or pasta wraps (both work great) 

Chop chicken into ¼ inch chunks. Mix chicken with coleslaw, soy sauce garlic and green onion mixing bowl. Place 1/4 cup mixture into the center of each wrapper. Fold bottom corner over filling then fold two sides toward the center. Moisten flap of remaining corner with beaten egg (or water) and seal. Place on sprayed cookie sheet and spray with non-stick spray and wipe with beaten egg to make a nicer brown when baked.
