Broccoli and Cheese Casserole

Uncle Harold doesn’t like (or didn’t) until he ate this broccoli and cheese casserole. It’s easy and delicious. Great for a pot luck meal. I made this once and only cooked it for 30 minutes, wrapped it in a towel and placed in a cooler. Then drove 3 1/2 hours to the in-laws for Thanksgiving. Casserole was still hot, completely cooked and ready to put on table when I got there.

Mexi-Corn Casserole

This recipe came from my secretary. Not sure where she got it but I altered it a little like I do with most recipes. Down here it the south people don’t think Jiffy Corn Bread is real corn bread because it’s sweet but this is one recipe that my southern husband can’t get enough of even if it does use the Jiffy.

Scalloped Corn

Scalloped corn is one of those easy, home cooked meal recipes. One of my sisters just loves it and when I moved away from my home town she would call me every time she was going to make it to find out how. She also wanted me to make it for any family event when I went home. She said she just couldn’t make it like I did but I really think she just wanted it and didn’t want to make it but that’s ok because it made her happy.

Tator Tot Casserole

As you read through this recipe you are going to think it sounds incredibly boring. I’m here to tell you it’s not, and my husband will verify. Every time I make this or even think of making it I think of my late daughter.¬† She also loved it. The combination of the meat, soup and tator tots creates an interesting taste.
