This recipe has more ingredients that most of my recipes but it’s worth it. We don’t normally like much spinach but this dish is wonderful with it. It doesn’t do well as left overs unless you really like spinach because it tends to get stronger.

1 (10 oz) package refrigerated pizza crust
1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
1/2 lb. lean ground beef
1/2 tsp. onion powder
1 tsp. black pepper
1 (7 oz) jar sliced roasted peppers, drained
1 cup (4 oz) shredded mozzarella cheese
1/2 cup fresh basil leaves
Nonstick cooking spray
1 tbl. grated parmesan cheese

Preheat the oven to 400°F.  Coat a rimmed baking sheet with nonstick cooking spray.  Roll out the pizza crust dough onto a cutting board.  Spread the spinach over the crust. Spread the ground beef evenly over the spinach and season with the onion powder, salt, and black pepper.  Top with the roasted peppers and shredded mozzarella. Place the basil over the cheese.  Roll up jelly-roll style and place on the baking sheet.  Lightly coat with nonstick cooking spray and sprinkle with parmesan cheese.

Bake for 22-25 minutes, or until golden brown.  Let sit for 5 minutes then cut into slices and serve. Makes 4 to 6 servings.
